Quick Seafood Marinara Stew

Ingredients

2 tbsp extra virgin olive oil 

1 onion, finely diced
3 anchovies, finely chopped
½ tsp chilli flakes
1 large handful parsley, stalks and leaves separated, both finely chopped
800g seafood marinara (mixture of peeled green prawns, firm white fish, mussels & squid), chopped into evenly sized pieces
½ cup white wine
1 x 400g can of white beans, drained and rinsed  
1 x 400g can chopped tomatoes

1-2 cups baby spinach 
Sour cream or Greek yoghurt, to serve
1 avocado, quartered
Salt and pepper

Method

Heat oil in Tefal Cook4Me (or pot), add the onion and anchovies and sweat off for 3 minutes before adding the chilli flakes and parsley stalks. Stir to coat in the oil.

Add the squid and sear off for 1 minute before adding white wine. Season with salt and pepper, bring to the boil and allow it to reduce slightly before adding the beans and tomatoes. Pressure cook for 10 minutes (or if using a regular pot, reduce heat to low and cook, covered, for 35 minutes). Release the steam and open the lid.

Add the mussels, white fish and prawns and pressure cook for a further 2 minutes. Once cooked, stir through the chopped parsley leaves.

Serve stew with fresh baby spinach leaves, avocado and a dollop of sour cream.
