Quick n Easy, Rose Wagon Wheel Pasta

Ingredients
1 packet wagon wheel pasta
1 medium brown onion, diced finely
3 garlic cloves
1 small red chilli, sliced in halves
½ cup grated parmesan
½ cup grated pecorino
150g tomato paste
3 tbsp extra virgin olive oil
1 cup of cream
3 tbsp vodka
¼ cup basil leaves, for garnish
Salt & pepper
Method
Cook pasta as per packet directions in a pot of salted boiling water.
Heat the olive oil in a pan on medium heat and add onion, garlic and chilli. Cook for 5-7 minutes or until the onion is soft, add a couple of tablespoons of pasta water into the pan.
Deglaze the pan with vodka and turn down the heat to simmer. Pour tomato paste into the pan and cook for 2 minutes.
Next add the cream to the sauce and stir to combine, and remove garlic and chilli from the pan.
Add pasta to sauce and mix in parmesan and pecorino. Turn off the heat and season with salt & pepper.
Serve into bowls and garnish basil leaves.
