Pumpkin and Broccolini Pulse Penne

Ingredients

250g pulse penne pasta

3 tbsp Extra Virgin Olive Oil

3 tbsp butter

2 garlic cloves, sliced thinly

4 sprigs of thyme, leaves removed

4 sprigs of oregano, chopped finely

1 cup of butternut pumpkin, skin removed & grated

1 bunch broccolini, chopped finely

Salt & pepper

½ cup pecorino, grated

2 tbsp pumpkin seeds

Method

Into a pot of boiling salted water, add the pasta and cook as per packet directions.

Heat extra virgin olive oil and half the butter in a large pan on medium heat.

Add garlic, thyme, oregano, pumpkin and broccolini to pan. Cook for 3 to 5 minutes or until pumpkin has collapsed and broccolini is tender. Add salt and pepper taste.

Strain pasta and reserve 1 cup of pasta water. Add pasta and pasta water to pan.

Combine together and add remaining butter and halve of the pecorino to pasta and cook for another minute.

Turn off heat and serve with remaining cheese and pumpkin seeds.
