Prune Flan

Cook Time 1 Hour 10 Minutes + Steeping

Ingredients

20 prunes, pitted
120g biscuit, pastry and cake plain flour, sifted
130g sugar
Pinch of salt
4 eggs
50g melted butter + extra to grease the baking dish
500ml milk
100ml of water
30ml of rum + 1 tablespoon rum

Method

Soak the prunes in the water and 30 ml of rum for 2 hours.

Preheat oven at 200°C. Whisk the eggs with the sugar until well combined, then add the flour and combine until smooth. Add the pinch of salt, melted butter, milk  and 1 tablespoon of rum. Grease an ovenproof dish and arrange the prunes evenly on the base. Now pour the mixture over the prunes. Bake for 10 minutes at 200°C. Lower the temperature to 170°C and bake for a further hour. Can be eaten cold or slightly warm.
