250ml water
75g butter
3 tsp. caster sugar

125g plain flour
4 eggs
200g dark cooking chocolate
½ cup pouring cream
Vanilla bean ice cream, to serve

Method
Preheat the oven to 180°C and line two large baking trays with baking paper.
Place water, butter, sugar and salt into a pot and bring to the boil. Remove from the heat and using a wooden spoon beat all the flour in at once.
Return back to a medium heat and continually stir for 1-2 minutes until a ball forms and the mixture comes away from the sides of the pot.
Now take off the heat and transfer pastry to a mixer, add an egg at a time, ensuring you beat each egg in to the dough really well and until it appears smooth and glossy.
Spoon the dough into a piping bag.
Pipe approximately one tablespoon of dough onto the tray, leaving 2cm between each. Bake in the oven 25-30 minutes. Once cooked allow to cool on wire rack.
For the chocolate sauce gently melt the chocolate and cream on a low heat.
To serve, cut profiteroles in half, fill with ice cream and sandwich together. Drizzle chocolate sauce on top and serve immediately.
