Prawn Boil

Ingredients

Spice mix

1 tbsp celery salt
1 tsp smoked paprika
1 tsp ground ginger
1 tsp mustard powder
1 tsp cayenne pepper
1 tsp ground clove
1 tsp allspice

4 bay leaves

1 brown onion, cut into quarters
6 baby potatoes
2 chorizo sausages (or any other smoked sausage), cut into chunks
2 cobs of corn, husks removed, cut in half
1kg large green prawns
100g butter
2 lemons

Method

Combine all of the spice mix ingredients and reserve a tablespoon of the mixture for later. Fill a large pot 2/3 full of water and add the remaining spice mix, bay leaves and onion. Bring to the boil and then turn down a little and gently boil for a further 15 minutes.

Add the reserved spice mix to small pot along with the butter and zest of 1 lemon. Melt the butter and swirl pan to flavour the butter with the spice and lemon. The butter will turn slightly brown and begin to become very foamy. Once all the foam subsides, remove from the heat.

Add the baby potatoes and sausage to the stockpot and cook for 10 minutes before adding the corn and cooking for a further 5 minutes. Now add the prawns and cook for 3-4 minutes.

With a large slotted spoon remove the prawns, sausages and vegetables and present on a large tray or serving platter. Drizzle over the butter and serve with wedges of lemon.
