Pork Loin Steaks with Zucchini Sauce

Ingredients

3 tbsp. olive oil
4x 2cm thick pork loin steaks
Salt and pepper

1 zucchini, grated
1 clove garlic, finely chopped
½ tsp. chilli flakes
2 sprigs of Thyme
Zest of 1 lemon, juice of ½ lemon
¼ cup chicken stock
¼ cup cream

Method

Heat the oil in a large saucepan over a medium heat. Season the steaks with salt and pepper and cook for 5-6 minutes on one side. Now flip steaks, followed by adding at the same time the grated zucchini, garlic, chilli and thyme. Cook for 2 minutes and then remove the steaks from the pan to rest.

Now add the chicken stock and cook for a further minute before adding the cream, zest and juice. Simmer until the sauce thicken slightly before serving with the rested steaks.
