Poached Eggs with Nduja Butter

Ingredients

100g unsalted butter

2 tbsp nduja (spreadable pork sausage)

2 English muffins, toasted

2 poached eggs, poached

½ cup wilted spinach

Method

Heat a pan over medium heat, add nduja and fry until crisp. Add the butter to the pan and melt together.

In a medium saucepan bring water and the vinegar to a boil, then, turn down to a simmer. Gently crack eggs individually into a glass and one at a time, slip into the water. Poach for 3 minutes until just set, then with a slotted spoon remove from the water and drain on a paper towel. Season the eggs with salt.

Add the wilted spinach onto the toasted muffin, place the poached egg on top and drizzle over a generous amount of ndjua butter.
