Peanut Butter Spiced Granola

Servings 4-6

Ingredients

2 cups rolled oats
½ cup dried apricots, chopped
1 cup shredded coconut
¾ cup flaked almonds, toasted
½ cup sunflower seeds
½ cup pepitas
¾ cup honey
½ cup peanut butter
¼ cup coconut oil (or butter)
1 vanilla bean, seeds scraped
2 tsp ground cardamom
1 tsp ground cinnamon
½ tsp clove

Method

Preheat oven to 180°C and grease a tray (around 28cm x 18cm) and line with baking paper.

Mix oats, apricots, shredded coconut, almonds, sunflower seeds and pepitas in a bowl.

Add honey, peanut butter, coconut oil, vanilla and spices to a saucepan, bring to a simmer and cook for 2 minutes until it has thickened a little. Quickly pour liquid onto oat mix and mix together using a spoon, being sure the dry ingredients are thoroughly coated. Spread evenly across tray and bake in oven for 10-15 minutes until golden. You may need to turn the tray once or twice to ensure an even colour is achieved.

Cool on the tray to room temperature and then store an airtight container for at least a month.
