Pan Fried Atlantic Salmon with Spiced Chickpeas Dill & Sumac

Ingredients

4 x 160 portions of Atlantic salmon
200g of cooked chickpeas
½ red onions finely diced
2 cloves garlic,
1 tbs sumac
1 tbs coriander powder
1tbs black pepper powder
½ tbs cayenne pepper  
½ bunch chopped dill
4 tbs organic yogurt
150mls good quality olive oil
2 lemons juiced
Lemon zest
salt pinch

FOR THE SPICES

Toast all the spices in the oven until golden. Mix through the chickpeas add the garlic, red onion, lemon zest and a splash of olive oil.This can be prepared in advance

Method

Lightly Pan-fry the Salmon fillets with a pinch of salt rubbed on them, on the skin side for 4 mins until the skin is crispy and the Salmon is just cooked.

Take the chickpea mix add the yogurt, dill and a squeeze of lemon. Arrange attractively on the plates top this with the crispy skinned Salmon sprinkle over some toasted sumac and drizzle olive oil
