One Pan Chorizo Brekkie

Ingredients
1 tbsp extra virgin olive oil
1 potato finely diced
2 chorizo, skin removed and torn
4 cherry tomatoes, halved
2 eggs
1 tbsp chives, finely chopped
Salt and pepper
Method
In a hot pan which has a lid, saute the potatoes in olive oil. Add the chorizo to the pan until browned a little.
Place the tomatoes and the eggs in the pan and cover with the lid until cooked as desired.
Serve hot and garnish with chives.
