Onde-Onde

Ingredients

1 cup glutinous rice flour

⅓ cup rice flour

Pinch of salt

1 cup pandan leave water

Pandan leaves, for rolling

Coconut sugar, cut into small pieces, for filling

Shredded coconut, for coating

Method

In a bowl, combine the glutinous rice flour, rice flour, and a pinch of salt. Gradually incorporate the pandan water into the flour mixture, stirring well for a few minutes until a cohesive dough forms. If the dough seems too dry, add a bit more pandan water; if it's too wet, sprinkle in a little more flour.

Take approximately 1 tablespoon of the dough and place it on a pandan leaf. Use the leaf to flatten and roll the dough into a thin sheet.

Put a piece of coconut sugar onto the flattened dough and roll it up to create a 2.5 cm diameter ball. Repeat this process until you've used up all the dough.

Boil some water in a pot and carefully drop the onde-onde balls into the boiling water. Allow them to cook for 5 to 10 minutes, or until they become slightly lighter in colour and begin to float on the water's surface.

Once cooked, remove the onde-onde balls from the water and place them in a bowl filled with shredded coconut. Roll the balls around until they are evenly coated with coconut. Serve and enjoy!
