Olive Oil & Citrus Side of Salmon

Ingredients
1 x 1kg side of Ora king salmon, skin on and pin boned
1 navel orange, thinly sliced
1 lemon, thinly sliced
1 vanilla bean, seeds scraped
3 tbsp extra virgin olive oil
Pinch of salt
Method
Preheat the oven to 110C. Bring salmon out of the fridge 1 hour before cooking.
Combine the vanilla with oil and drizzle over fish.
Season generously with salt then lay the citrus over fish flesh. Place on a baking dish lined with baking paper and bake for 30-35 minutes, or until it is just cooked.
