Oat milk porridge with gold kiwi compote

Ingredients

1 cup of oats or almond milk

1 cup of rolled oats

1 Granny Smith apple, peeled, cored and grated

6 Orchard Rd Gold Kiwi Fruit, peeled

Juice 1 lemon

4 tbsp of maple syrup

½ cup macadamia nuts, toasted and chopped

Method

Cover the oats with hot water and soak for 1-2 hours or until it has absorbed all the water.

For the compote, place apple, Orchard Rd Gold Kiwi Fruit and lemon juice in a small pot and gently bring up to a simmer. Place on the lid and cook for 5-8 minutes.

Bring the milk to boiling point and then whisk in the soaked oats. Whisk for 4-5 minutes to achieve a creamy consistency and fold through 3 tbsp of maple syrup.

Serve porridge with a generous dollop of Gold kiwi compote and a sprinkle of macadamias and remaining maple syrup.
