Mussels in Mustard Cream

Ingredients

1kg mussels

150ml cooking cream

1 tbsp seeded mustard

50g pancetta or bacon, finely chopped

Method

Heat oil on high heat. Add pancetta to the pan to cook for a minute, followed by the mussels. Then add the mustard, stir and place the lid on and cook for 3-4 minutes or until all the mussels are open. Use a slotted spoon to remove the mussels.  Add the cream to the pot and whisk on a medium heat until thickened. 

Pour over mussels.
