Mozzarella and Zucchini Frittata

Ingredients
3 zucchinis, cut into rounds
1 onion, chopped
4 eggs
1 tbsp grated parmesan
¼ cup fresh breadcrumbs
200g smoked scamorza, or any mozzarella of your choice) slices thinly
4 slices of ham (optional)
Salt and pepper
Method
Preheat the oven to 180°C.
Arrange zucchini and onion onto a tray and drizzle over oil, salt and pepper. Toss to coat and roast in the oven for 15 - 20 minutes until just tender and lightly caramelised. Remove and cool slightly.
Whisk the eggs with the parmesan, breadcrumbs, salt and pepper and cooled zucchini and onion. Use a fork to combine so all of the zucchini rounds are coated.
Spread half of the zucchini and egg mixture into the base of a round 22-24 cm pan. Arrange sliced scamorza and ham on top and then pour over the remaining zucchini mixture.
Bake in the oven for 15 - 20 minutes or until puffed and golden.
