Miso Salmon Wrapped in Fillo

2 tbs. miso paste
1 tbs. soy sauce
1 ½ tbs. brown sugar
½ knob of ginger, grated
1 tbs. boiling water

2 x 180g salmon steaks, skin removed and pin boned
3 sheets of fillo
20g butter, melted


Miso Salmon Wrapped in Fillo


Pre heat the oven to 180C.

For the marinade combine ingredients in a bowl. Cut the salmon steaks in half vertically. Place the four pieces in the marinade and coat. Set aside.

To prepare the fillo, brush the first sheet with butter. Place the next sheet on top and butter again. Repeat process with the last sheet. Cut the filo stack into four.

Place one salmon portion on the filo and wrap like a cigar. Brush with butter. Place on a baking tray lined with baking paper. Repeat the process with the remaining salmon and bake in the oven for 10-12 minutes or until pastry is golden.
