Marinated Beef Baguettes

Ingredients
300g Sirloin Beef
Turkish bread
2 Eggs
2 Garlic cloves
Rice Bran Oil
Salt/pepper
1 Chilli
1 Lemon
1 knob Ginger
sml bunch Coriander
sml bunch mint
1 Carrot
1 red, 1 green capsicum
1 tsp Dijon mustard
Marinated Beef Baguettes
Method
- To make the marinade, finely chop mint, chilli, ginger, 1 clove garlic, zest of 1 lemon and the juice, good drizzle of olive oil, salt and pepper. To cook the steak, make sure the grill is really hot! Seat on both sides for about 3 minutes each. Let the steak rest before slicing it. (This is very important)!
- Make some aioli with 2 egg yolks, 1 clove garlic, lemon juice, Dijon mustard and olive oil.
- Get a big Turkish loaf of bread and slice in half. Drizzle with olive oil and toast.
- Julienne the capsicums and grate the carrot.
- To assemble lather the bread with aioli, thinly sliced beef and garnish with capsicum, carrot and coriander.
