Maple Roasted Carrots

Servings 6 as a side


6 carrots of similar size, scrubbed and unpeeled (about 1 kg)

100g butter, softened

1/4 cup maple syrup

1 tsp smoked paprika

Goat’s cheese feta, to serve (I like Meredith marinated Goat’s cheese)

1 tbsp pepitas

2 springs parsley, finely chopped

Pinch of salt

Maple Roasted Carrots


Pre heat oven to 180°C.

Spread half of the butter into a baking tray and place carrots on top. Drizzle over maple syrup and then season with salt. Toss carrots and then add the remaining butter on top. Roast carrots in the oven for 40-45 minutes or until just tender, turning halfway. 5 minutes before the carrots are cooked, sprinkle over the paprika and pepitas and keep cooking.

Sprinkle parsley over carrots once cooked and add crumbled feta.
