Lunch Box Veggie Frittatas

Servings makes 6

Ingredients

3 eggs

¼ cup plain flour

½ tsp baking powder

2 tbsp sour cream

1 zucchini, grated

1 carrot, grated

1 handful of spinach, chopped

2 handfuls freshly grated cheddar

Method

Preheat the oven to 180°C and line a 6-hole muffin tin with paddy pans.

In a mixing bowl, whisk the sour cream and eggs together. Add the flour and baking powder and fold through.

Add the remaining ingredients and combine well.

Spoon the mixture into a 6 hole lined muffin tin and bake for 30 - 40 minutes or until cooked through. Cool before until warm then serve. They can also be eaten cold.
