Lemon & Raspberry Friands

Servings 12 friands

Ingredients

3 cups icing sugar
2 cup hazelnut meal
2 cup plain flour
10 egg whites
360g butter, melted and cooled slightly
Pinch cinnamon
Zest 2 lemon
1 cup frozen raspberries

Method

Preheat the oven to 170°C. Lightly grease a 12-cup friand pan.

Add the icing sugar, almond meal and plain flour to a mixer. With the mixer on a medium speed add the egg whites, a little at a time. Whisking well between each addition. Now slowly pour in the butter and mix through until just combined. Fold in the cinnamon, lemon zest and raspberries.

Spoon the mixture into the friand pan and bake for 20 minutes or until golden in colour and a skewer inserted comes out clean.
