Lemon Chicken

2 chicken thighs, boneless, cut into 2cm cubes

1 tbsp light soy



1 whole egg

3 tbsp corn flour

Vegetable oil, for deep frying

Lemon sauce

1 tbsp extra virgin olive oil

1 cup chicken stock

¼ cup lemon, juice

1 tbsp sugar

2-3 slices of lemon

1-2 tbsp honey

2-3 tbsp corn flour

1 lemon, zest

Lemon Chicken


Coat the chicken in the soy sauce, egg, corn flour, salt and pepper, and deep fry at 170C-180C for 3-4 until golden brown and cooked through.

For the sauce, add the stock, lemon juice, sugar, and honey and bring to the boil. Add corn flour flurry (corn flour mixed with a little water) to thicken the sauce and then whisk in the lemon zest. Adjust the sugar according to you taste.

Add chicken to the sauce and mix well. Garnish with sesame seed and spring onion. Serve and enjoy!
