Leftover Meat Street Tacos

1 tbsp extra virgin olive oil

400g leftover roast meat (chicken, beef or lamb), shredded
1 tsp ground cumin
6 street taco tortillas
1 tbsp pickled jalapeños including ½ tbsp of pickling liquid
½ cup sour cream
1 avocado, mashed
1 white onion, finely chopped
2 sprigs of coriander, picked
Pinch of salt

Leftover Meat Street Tacos


Warm up tortillas as per packet instructions.

Place the sour cream, jalapeños and its pickling liquid into a small food processor and blitz until smooth.

In a large pan, heat oil over a high heat and add the shredded meat. Toss to coat in the oil. Season with cumin and salt and cook for 3-4 minutes until it becomes crisp.

Fill warm tortillas with meat, avocado, jalapeño cream, onions and coriander.
