Kourou - Traditional Greek Cheese Pastries

Ingredients

For the Dough

120g melted butter

120g olive oil

120ml room temperature milk

60g kefalograviera

500g all-purpose flour

1 tsp baking powder

Sesame seeds (optional)

For the Filling

250g Greek feta

100g fresh ricotta 

1 egg

Pepper

Chopped pitted olives, or sun-dried tomatoes, or dried mint, or dried oregano (optional fillings)

1 egg, to brush on top

Method

Using a large enough bowl, add the butter, the oil, the milk and grated cheese. Just use a whisk to bring together.

In another bowl, mix the flour with the baking powder and cracked pepper. Add the flour to the wet ingredients in batches and mix as you go along.

The dough will come together quickly and is ready when it doesn’t stick to your hands. Divide it into 25 balls approximately.

For the filling, mix the feta and ricotta, as well as pepper and egg together.

Using your hands shape the dough into a circle. Spoon some mixture in and then close it. Using a fork to seal edges.

Egg wash, sprinkle sesame seeds and bake in a 200°C oven for approximately 25 minutes.

Serve and enjoy warm or cold.
