King Salmon with Green Beans

Cook Time 30 minutes

Servings 2

Ingredients

1 tsp olive oil

2 x 180g pieces of king salmon, skin on and pin boned

300g green bean, halved lengthways and blanched

1 handful of rocket

Dressing 

1½ tbsp creme fraiche

1 heaped tsp Dijon mustard

1 tsp white vinegar

3 anchovies, minced 

Juice and zest ½ lemon

1 tbsp capers, chopped 

Salt and pepper

Method

For the dressing, combine all the ingredients together and season to taste.

Pat the fish dry with a paper towel. Drizzle oil over fish and season with salt. Place the fish in a non-stick frying pan, skin side down over a medium-low heat. Cook for 5-7 minutes before turning over and cooking for a further minute or until cooked to your liking.

Toss rocket and beans with the dressing and serve with the fish.
