Kefir Dip with Dukkah

Prep Time 15 minutes + overnight straining

Ingredients

1kg of probiotic kefir

2 tbsp pistachio dukkah, plus extra to garnish

1 small clove garlic, minced

1 small handful each parsley

½ tsp salt

Grilled Turkish bread, to serve

Method

Pour kefir into a muslin cloth that has been placed into a sieve over a bowl. Tie the muslin cloth together and place the bowl into the fridge overnight to drain.

Unwrap the muslin and add the cheese-like kefir into a bowl.

Use a mortar and pestle to crush garlic and herbs. Add pistachio crumbs and then combine through kefir-cheese. Sprinkle dukkah over the top and serve with sliced Turkish bread.
