Kataifi Cheese Balls

Ingredients

50g clarified butter, melted

200g of kataifi pastry

150g kefalograviera cheese, finely grated

12 bocconcini balls

2 tsp dried oregano

¼ cup of honey

½ a lemon, juiced

Method

Preheat the oven to 180°C and grease a 12 hole mini muffin tin.

Tease the kataifi apart with your hands and lay out 12 x 15cm strips on a clean board. Drizzle generously with the butter and then starting at the end closest to you, sprinkle about 1 teaspoon of kefalograviera cheese and then nestle a bocconcini ball on top. Wrap the kataifi tightly around the cheese to form a ball. Place in the prepared tin and bake in the oven for 15-20 minutes or until golden brown.

Place the honey in a pot with the lemon juice and oregano and just bring to the boil.

Place cheese balls onto a platter and drizzle over warmed honey. Serve warm.
