Jocks Loaf
Cook Time 1 hour plus overnight soaking
Servings makes 1 loaf
Ingredients
200g raisins
200g sultanas
125g soft brown sugar
200ml brewed chai tea
1 egg, whisked into milk
50ml milk
300g self raising flour
1 tsp bicarbonate soda
¼ tsp salt
1 tsp vinegar (I used apple cider vinegar)
Method
Mix the dried fruit and brown sugar together and pour over the hot tea. Mix well, cover and leave overnight.
The next day, whisk the egg into the milk, then add the milk mixture, flour, bicarbonate of soda, vinegar, and salt to the dried fruit mixture. Stir thoroughly until well combined, then pour into a lined 12cm x 23cm loaf tin.
Bake in a preheated oven at 180°C fan force for 40-45 minutes or until a skewer comes out clean after it’s inserted.
Leave to cool for 5-10 minutes, cut into thick slices and enjoy! Also magic toasted the next day for breakfast with marmalade.
