Jamaican-Style Jerk Pork

Ingredients
1 kg piece of pork scotch fillet
Jerk Marinade
2 tsp. allspice
1 tsp. cinnamon
½ tsp. nutmeg
1 tsp. dried oregano
2 tsp. brown sugar
2 cloves garlic, minced
½ an onion, grated
1 tbs. red wine vinegar
2 tbs. lime
2 tbs. olive oil
1 chilli, finely chopped
Salt and pepper
Dressing
Mayonnaise
Hot chilli sauce
Lime juice
Soft buns, to serve
Method
For the jerk marinade combine all ingredients in a bowl.
Pour over the pork and massage into the meat. Place in a large non-reactive glass container, cover and marinate overnight in the fridge.
Pre-heat the oven to 160C.
Using the roaster with rack, place pork and add water to the bottom of the tray. Bake the pork for 1 hour 10 minutes. Rest.
Combine dressing ingredients and slather on bread, add the pork and serve.
