Honey Madeleines

Servings 12 small pieces


100g (a little under ½ cup) butter, melted
3 eggs
110g (½ cup) caster sugar
150g (1 cup) plain flour
Zest of 1 lemon
Zest of ½ orange
1 tbs. honey


Honey Madeleines


Pre heat the oven to 200?C. Grease and flour a Madeleine tin* (if you do not have one of these mini cup cake trays are fine).

Beat the eggs and sugar with an electric mixer until thick and pale in colour. Slowly sift in the flour and lightly mix. Fold in the melted butter, zest of the orange and lemon and the honey until well combined.

Spoon the batter into the moulds, filling up ¾ full and bake in the oven for 5-6 minutes. Remove from the oven and let cool slightly before turning out onto a wire rack. Repeat the process until all batter is used up.
