Healthy Kefir Pancakes

Cook time 25 minutes + overnight resting

1 cup wholemeal flour

2 cup of kefir

1 tsp baking powder

1 egg

Splash of olive oil to grease the pan

Pinch of salt

Berries, to serve

Maple syrup, to serve

Healthy Kefir Pancakes


Add the flour to the bowl and whisk in the kefir. Cover and let rest in the fridge overnight. By resting the batter, you will achieve fluffier pancakes.

The following day, add the baking powder, egg and salt and fold through without over-mixing.

Brush a little oil into a non-stick pan over medium heat. Using a ladle to spoon batter into the pan. Cook for 1 minute and then once bubbles begin to appear and pop, flip and cook for a further minute until golden.

Serve with maple syrup and berries.
