Healthy Breakfast Cookies

Ingredients

2 ripe bananas 

¾ almond butter 

2 tbsp maple syrup

2 cups of instant oats

½ desiccated coconut 

¼ cup pumpkin seeds

Pinch cinnamon  

1 punnet of berries

Method

Preheat the oven to 200°C and line 2 trays with baking paper.

In a bowl mash the bananas, almond butter and maple syrup with a fork until well combined. Add the remaining ingredients.  

Using yet hand roll heaped tablespoonfuls of the dough into a ball and arrange it on a tray leaving a little space between each. Use a fork to gently press down and then press a berry on top.

Bake for 30 minutes or until golden. Cool before serving.
