Haloumi, Salami and Roasted Capsicum Kataifi Rolls

Ingredients

Olive oil
250g of Kataifi pastry
250g Haloumi, cut into 8 slices
4 slices salami, cut into 2
2 whole pieces of roasted and in oil capsicum, store bought, each cut into 4 pieces
½ cup basil pesto, store bought is fine

Method

Pre heat the oven to 200C and grease and line two baking trays with olive oil.

Place Kataifi in a bowl with a good drizzle of olive oil. With your hands, gently loosen and separate the strands. Divide the pastry strands into 8 bundles and spread them out into strips. Place the haloumi, salami, capsicum and a dollop of pesto at one end of Kataifi. Now roll tightly to form rolls. Continue the process.

Place them on the baking trays and bake in the oven for 15 minutes or until the pastry is golden brown.
