Halloumi Burger

Ingredients

1 tsp olive oil

200g Greek halloumi, thickly sliced

4 butter lettuce leaves

1 tomato, sliced

4 slices of tinned beetroot

1 small white onion, finely sliced into rounds

2 dill pickles, sliced

4 soft sesame milk buns

Salt and pepper

Honey mustard sauce

1 tsp honey

¼ cup whole egg mayonnaise

1 tbsp seeded mustard

Method

To make the sauce combine all the ingredients.

Cut the buns in half and toast in the pan. Remove.

Lightly oil the halloumi. Heat a large frying pan over a medium heat and add the halloumi. Cook for a few minutes on each side until just crisp. Remove and drain.

Dress the top and bottom of the bun with sauce. Place the lettuce, tomato and beetroot on the base then top and season with salt and pepper. Add the halloumi, onions and pickles and sandwich together and serve.
