Grilled Tuna with Confit Potatoes

Ingredients

100g fresh tuna
3 sprigs of thyme
1 bay leaf
slice of lemon zest
1 carisma potato, peeled and sliced
Extra Virgin Olive Oil

Method

Arrange sliced potatoes on baking dish. Add thyme and the bay leaf. Drizzle in enough olive to just cover the potatoes. Transfer to a preheated oven at 160C for 1 hour or until potatoes are cooked through. Grill tuna in a griddle pan over a high heat for 1 – 2 minutes either side.

Serve on a bed of the confit potatoes topped with fresh baby herbs.
