Grilled Steak and Onion Sandwich

Ingredients

1 tsp extra virgin olive oil 

2 x 180g sirloin steaks

1 brown onion, sliced 

1 tsp red wine vinegar

4 tbsp good quality bbq sauce 

2 tbsp aioli or mayonnaise

1 large handful of rocket (or lettuce) leaves

2 ciabatta rolls  

Salt and pepper 

Method

Heat a grill pan over a high heat. Place the steaks between two pieces of baking paper and, using a meat mallet pound to thin out. Spread oil over each side of the steak and season with salt and pepper. 

Add ½ onion to one side of the pan and add a splash of oil and a pinch of salt. Toss regularly until caramelised, add a splash of vinegar.

To the other side of the pan add the steaks and grill for a minute on each side (or longer if you prefer it more cooked). Rest the steaks for a few minutes and remove the onions.

Cut the rolls in half and grill on the cut side for a minute. Spread BBQ sauce on one side and aioli on the other. Top with the steak, onions and rocket. Sandwich together and serve.
