Grilled Mushroom Wraps

4 x soft 8-inch flour tortillas or wraps

Extra virgin olive oil, for brushing

40g butter, melted

2 cloves garlic, chopped

2 sprigs parsley, finely chopped

5 large flat mushrooms, stalk removed

3 tbsp pistachios, chopped

250g mozzarella, coarsely grated

Chilli paste, to taste

2 large handfuls baby spinach

Salt & pepper

Lemon, to serve

Grilled Mushroom Wraps


Turn the grill on and select the manual program and press ok for 210C.

In a bowl combine butter, garlic, parsley and salt and pepper. Brush garlic butter generously over each mushroom.

As soon as the preheating is complete, put the mushroom onto the grill and close it. Set a timer for 10 minutes. Cook as shown on the display until they are grilled.

Remove and slice the cooked mushrooms.

Lay tortillas on a board and brush with some of the chilli paste if using, sprinkle over the cheese and pistachios, and then add the mushrooms and spinach. Fold in the side and then wrap into a cylinder.

Select the panini program, wipe the grill clean and press OK. As soon as the preheating is complete put the wraps, seam side down on the grill and close it. Cook according to the instructions on the screen.

Once crisp and golden, remove and cut in half. Place on a plate with a wedge of lemon.
