Grilled King George Whiting with Warm Tomato Sauce

Ingredients
2 King George whiting, scaled and gutted
3 tbsp extra virgin olive oil
A small handful of lemon thyme
2 ripe tomatoes
½ tsp smoked paprika
1 lemon, cut into wedges
Salt and pepper
Method
Preheat the oven to 180°C and place an oven safe grill pan over a medium-high heat.
Drizzle a small amount of oil over the tomatoes and season with salt. Place on the grill and cook for 6-8 minutes or until charred and softened. Remove, place in a bowl and cover with clingfilm to cool a little.
Drizzle a little more oil over the fish and season all over with salt and pepper and in the cavity, then add the thyme to the cavity. Sear the fish in the grill pan for 1 minute on each side then place the pan in the oven for 6-8 minutes.
While the fish is cooking, remove skins and some of the seeds from the tomatoes, cut into quarters and crush in a mortar and pestle. Add the remaining oil, the paprika and a few lemon thyme leaves and crush until the tomatoes became a sauce.
Remove fish from oven. Spoon sauce onto a small platter and serve whole fish on top. Garnish with lemon.
