Grans Sweet Cucumber Pickles

Servings about 900 grams

Ingredients

6 Lebanese cucumbers or apple cucumbers (or 12 pickling cucumbers), peeled and diced
2 small onions, diced
¼ cup salt
1/2 L white vinegar
4 tbs. sugar
1/2 cup plain flour
1/2 tbs. curry powder
1/2 tbs. mustard powder
1/2 tbs. turmeric
1/4 cup water (optional)

Method

In a large bowl, add the cucumbers and onions and salt overnight. The next day drain off all the liquid.

Put the drained cucumbers and onions into a pot with 350ml of the vinegar and the sugar. Bring to the boil, then turn down and simmer for 30 minutes or until the vegetables are soft.

Combine the flour, curry, mustard powder and turmeric with the remaining vinegar. Add this mixture to the pot and a boil for another 10 minutes. Add 1/4 water if the mixture is looking a little dry.

Cool the pickles before adding to sterile bottles cover and seal.
