Gnocchi with XO Prawns

Ingredients

8 green prawns, peeled and deveined and butterflied

1 tbsp extra virgin olive oil

2 cloves garlic, finely chopped

2cm piece of ginger, minced

1 tbsp tomato paste

3 tbsp XO Sauce

2 tsp light soy sauce

2 tsp caster sugar

100ml chicken stock

½ tsp sesame oil

2 spring onions, julienned

500g gnocchi

Method

Bring a large pot of salted water to the boil.

Heat the oil in a sauté pan and add the garlic and ginger and stir-fry until fragrant. Add tomato paste and stir through, cooking off for a minute. Add the XO sauce, soy sauce, sugar, chicken stock and sesame oil. Add the prawn meat and simmer for a minute to just cook the prawns and allow the sauce to thicken.

Add the gnocchi and cook as per packet instructions.

Drain and toss through the sauce with a few tablespoons of starchy cooking water. Garnish with spring onion.
