Gluten Free Spaghetti with Mushroom Ragu

Ingredients
350g gluten-free spaghetti
250g button mushrooms, sliced finely
1 small white onion, diced finely
2 garlic cloves, sliced thinly
4 sprigs of lemon thyme, chopped finely
1 x jar of tomato passata
2 tbsp porcini mushroom powder
½ bunch of basil
½ cup olive oil
½ cup grated parmesan
Salt & pepper
Method
In a pot of boiling salted water, add the pasta and cook as per packet directions.
In a large pan, heat olive oil on medium heat. Add onion, garlic, lemon thyme and cook for 3 minutes.
Next, place mushrooms into the pan and sauté for 2 to 3 minutes.
Add porcini, tomatoes and pasta water and reduce heat to a simmer. Cook for 8 minutes or until the sauce has thickened. Season the sauce with salt and pepper.
Tear basil leaves and add to the pan. Finally, strain the pasta and toss through the sauce.
Finish with parmesan.
Serve and enjoy with family and friends!
