George's Olive Oil Chocolate Mousse with Fresh Berries

Ingredients

100ml extra virgin olive oil
150g good quality dark cooking chocolate
250g pouring cream
1 punnet raspberries
1 punnet blueberries
1 punnet strawberries
Biscotti (optional)

Method

Gently melt the chocolate in a bowl standing over a pot of simmering water.

Stir in the olive oil.

Whip the cream to soft peaks and then add to the melted chocolate and olive oil.

Place in a pretty glass topped with fresh berries and biscotti.
