Fried Eggs with Hummus & Sumac

Ingredients

1 egg
salt & pepper
1 tsp. olive oil
1 tbsp hummus
1 tbps. danish fetta
1 small pita bread
juice of ½ lemon
¼ red onion, sliced
¼ cup parsley, picked
pinch sumac

Method

In a small bowl combine, onion, olive oil, salt, parsley, sumac and lemon juice. Set aside.

Heat olive oil in a non stick pan over a medium flame. Add egg and cook to your preference.

Meanwhile, heat pita on a hot griddle pan.

To assemble, smooth hummus over the pitta, add fried egg and top with onion mixture and crumbled fetta.

Roll up and serve.
