Fresh Fettuccine with Prawn and Sicilian Green Olives

Ingredients

375g fresh egg fettuccine

250g green prawns, deshelled, deveined, chopped roughly

¼ cup olive oil

3 tbsp butter

½ cup Sicilian green olives, pitted

3 garlic cloves, sliced thinly

½ bunch flat leaf parsley, chopped finely

¼ cup mint leaves

½ cup basil, leaves

1 green chilli, sliced thinly

1 lemon, zested & juiced

Salt and pepper

Method

In a pot of boiling salted water, add the pasta and cook as per packet directions.

Heat olive oil and butter in another pot on medium heat. Add garlic, chilli & prawns. Cook for 3 minutes. Add parsley and half the amount of basil to the pot. Cook for 2 minutes.

Next add olives, lemon zest & juice to the pan and ½ cup of pasta water. Simmer for 2 minutes.

Remove pasta, add to the pot and combine.

Turn off heat and mix in mint and basil. Season with salt and pepper.

Serve and enjoy with family and friends!
