Francophile Crab and Prawn Baguette

2 egg yolks
2 tsp Dijon mustard
1 cup olive oil
Juice of 1/2 a lemon
Pinch of salt

Cooked meat of 1 crab
10 cooked prawns
1 baguette, sliced down in the middle (not all the way)
5 spring onions, finely chopped
2 tbsp dill, finely chopped
Radish, finely sliced, to garnish

Francophile Crab and Prawn Baguette


To make the mayonnaise: Whisk the egg yolks together with the mustard, then add a few drops of olive oil before whisking again. Repeat this process with the olive oil until the mayonnaise is thick and sticks to the whisk. Add in the lemon juice and a pinch of salt and give the mayonnaise one last mix.

Mix the mayonnaise in with the crab meat, then finely chop the prawns and add them in too. Add in the dill and spring onions and toss everything together.

Stuff the baguette with some lettuce leaves before scooping in some of the prawn and crab mixture, then topped with the finely sliced radish.
