Folded Egg and Ham Muffins

Ingredients
3 eggs
100ml cream (optional)
5g butter
1 tsp extra virgin olive oil
2 sliced American-style burger cheese
6 double smoked leg ham
Bbq or tomato sauce (or tonkatsu sauce)
2 English muffins
Salt & pepper
Method
Heat a pan over medium to high heat.
Add muffins cut side down to a pan to warm through and toast lightly. Place on a plate and add ham onto the base of each muffin.
Whisk eggs and cream together with a small pinch of salt and pepper.
Add the butter over medium heat with a splash of oil. Allow to melt and foam then pour in the eggs and allow to just set for 20 seconds. Using a rubber spatula push the egg in a circular motion to form folds in the cooked eggs. Tilt pan and allow uncooked egg to set again and use a spatula to push egg in a circular motion.
Portion eggs onto ham and cheese. Add sauce and sandwich with muffin top.
