Fillet o’ Fish Burger

Ingredients

400g firm white fish like snapper, rockling or flathead 

4 soft buns, warmed 

4 slices American slice cheese

2 cups panko crumbs 

Batter

1 egg 

½ cup plain flour

1 tsp onion powder

½ tsp garlic powder 

Pinch salt

Tartare Sauce

¾ cup whole egg mayonnaise

1 tsp American mustard 

Zest and juice ½ lemon

2 dill pickles, finely diced and 1 tbsp of pickling liquid 

1 tbsp capers finely chopped

Method

For the sauce, mix all the ingredients together.

For the batter, whisk ingredients together with ½ cup water until smooth. Dredge fish into the batter allowing excess to drip off then press into panko crumbs. Spray generously with oil spray and bake in the air fryer at 180°C for 10 minutes. Once golden and crisp, lay the cheese on top of the fish and close the air fryer door so the residual heat melts the cheese.  

Add fish to the base of the bun and top with tartare sauce and bun top. Lightly squish together.
