Fig, Prune and Walnut Log

Ingredients

1 cup pitted prunes

1 cup dried figs 

1 cup walnuts 

1 tsp fennel seeds, toasted and crushed lightly 

Method

Place all the ingredients into a food processor and blend into a rough paste.

Using wet hands, remove from the bowl and place into the middle of a long sheet of cling wrap. Spread evenly so it’s about 20 cm long. Roll up so entirely covered and then roll back and forward onto a bench to form a log. Twist and tie both ends and refrigerate for an hour before slicing into rounds to serve with cheese and crackers. 

Note: this will keep up to 3 - 4 weeks in the fridge if wrapped tightly.
