Elbows with Artichokes and Peas

1pkt San Remo Elbows
2tbsp olive oil
3tbsp butter
1/2 sml onion, sliced finely
4 globe artichokes, trimmed, sliced thinly
1 garlic clove
2cups of peas
1 ½ cup chicken stock
¼ cup flat leaf parsley, chopped finely
1 cup grated parmesan
Salt & pepper

Elbows with Artichokes and Peas


In a pan on low heat, add oil and butter. Next add the garlic and onion. Cook until garlic is brown. Remove the garlic and add the peas, artichokes and cook gently for 4 to 5mins.

Cover peas and artichokes with chicken stock and simmer for 15 to 20mins or until tender.

Add salt & pepper to taste and stir in parsley.

Cook pasta as per packet directions. Strain pasta once al dente and pour into pan. Cook for a further minute.

Serve with generous amount of parmesan over the top.
