Eggs Baked in Tomatoes

2 large tomatoes

2 eggs

Fresh basil

Salt

Pepper

Olive oil

Prosciutto

Bread toasted to serve

Justine shows you how to make eggs baked in tomatoes, the perfect recipe for weekend breakfast!

Method

Preheat the oven to 180°C

Slice the bottom of the tomatoes and using a teaspoon or a melon baller, make a cavity in it. Place the tomatoes upside down on a baking dish, with the hollow facing up. Fill the tomato with an egg, fresh basil, salt, pepper and drizzle with olive oil.

Bake in the oven for 10-15mins.

Once the egg has set, serve on toast with prosciutto and some more basil.
